Lemon Herb Salmon

This is one of my go-to recipes for quick but delicious week night dinner, or dinner’s with friends. It takes very little prep, and the salmon is cooked in the oven under the broiler for 15 to 20 minutes. I usually cook enough to have leftovers for this Leftover Salmon Salad or Salmon Cakes/Burgers (coming soon.)

You can serve it with roasted vegetables, or a simple green salad. I’ll be posting ideas on simple quick side dishes like that soon. You can suscribe or follow me on Instagram for updates.

Lemon Herb Salmon

A flavorful quick broiled salmon with fresh herbs, garlic and lemon.

  • 3 lbs Fresh Wild Caught Salmon
  • 1 Lemon
  • 2 Garlic Cloves
  • 1 1/1 tsp Fresh Oregano
  • 1 1/2 tsp Fresh Thyme
  • 1 tbsp Fresh Parsley
  • 1 tsp Sea Salt
  • Fresh Ground Black Pepper (to taste)
  • 2 tbsp Olive Oil
  1. Prepare a baking sheet with cooking spray

  2. Place salmon on baking sheet

  3. Chop herbs and combine in a bowl together with minced garlic, and zest of 1 lemon

  4. Add olive oil and juice of the lemon to the herbs and garlic mixture

  5. Spread evenly over salmon

  6. Set oven rack on the second place from the top, turn broiler on high and put salmon in oven for 15 minutes. Check salmon every 5 minutes, if the herbs on top begin to burn, move salmon to a lower rack in the oven but never lower than the middle. This may increase the cooking time by 5 to 10 minutes.

  7. Remove salmon from oven, serve with roasted vegetables or salad.
